I love this stuff. I just cant get enough of it. Proberlly my fav beer at the moment. Might go up to the brewery this weekend

Does any1 have a recipe for this?? Part mash or simalar?

I have done a couple brews with NS but none have come out quite like Knappstein.

Can you write with one hand inside a pocket? Any info you can get from the brewery would be much appreciated! Ingredients, yeast used, temperatures, mash schedules... act dumb yet interested. ;)

Don't blame you! It is my favourite beer at the moment as well. I was not all that impressed with Amarillo, but I certainly am one of the NS lovers!

A bloke in a brewery with a vigorously moving hand in his pocket sounds like an excited homebrewer to me. :shock: :D

If you see any big gabs of grain, take note of what they say please! I have been using a 100% Bo Pils grain bill but it just does not seem to be turning out the way I want. :(

Once we nail this recipe there will be a long list of happy home brewers!

I will take some notice for sure. I will even get my girlfriend to take notice aswell.

Have you tried emailing them or thay wont let on with anything?

I am keen as mustard to try to make something simalar

i reckon they use aussie grain...

my mate used kirin pale malt... turned out awse...

No, I have not tried to e-mail them. But it would be my guess that they would be less than forthcoming with their "secret recipe".

I suppose if all else fails I could have a go...

They only have 1 grain & 1 hop on site.

JW Pilsner & Nelson sauvin.

So getting close to the recipe shouldn't be too hard :wink:

I added 5% melanoidin to my one and only attempt. The rest was wey pils and all nelson sauvin. One of the simplest beers i have made and didnt last long on tap!

Got myself some NS flowers for my next crack and will leave out the melonoidin. 38IBUs.

This is my 1st time at trying to make a recipe from scratch. So i thought id post it up and see you guys for advice etc..... Im trying to do it as a part mash and this is from top of my head. I maybe have to much or little so thats why im running it past you guys.

2.5kgs JW Pilsner Malt
1 can pale malt extract
30grms NS @ 60mins
30grms NS @ 30mins
15grms NS @ 5mins
15grms NS @ flame out
good lager yeast maybe wyeast of some sought?

Completely remove the 60 min addition and it is nearly perfect! ;)

For a 23L batch I would go:

30grms NS @ 20mins
15grms NS @ 5mins
15grms NS @ Dry Hopped

S-189 yeast is what I would use.

Timmsy, download yourself a copy of beersmith, its free for a month and it can do all these calcs for you.

As Kev said, ditch the 60 min addition.

FWIW, the recipe i used last time was this;
4.25 kg Pilsner (Weyermann) (3.3 EBC) Grain 94.44 %
0.25 kg Melanoidin (Weyermann) (59.1 EBC) Grain 5.56 %
20.00 gm Nelson Sauvin [12.60 %] (20 min) Hops 19.8 IBU
20.00 gm Nelson Sauvin [12.60 %] (10 min) Hops 11.9 IBU
20.00 gm Nelson Sauvin [12.60 %] (5 min) Hops 6.5 IBU
0.50 items Whirlfloc Tablet (Boil 15.0 min) Misc
1 Pkgs Budvar Lager (Wyeast Labs #2000) [Starter 3000 ml] Yeast-Lager

20L, OG 1.050, IBU 38.

Dumped it onto the yeast cake of a bo pils at 12C and kept it at 11-12 for 2 weeks then kegged. Next time i will dump in a heap at flameout as well and might even dry hop.

I can only do a weeny boil, i.e 3L, maaaaybe 4. More hops? Less hops?

Same amount of hops, just dont add all the extract. I used to do small boils for kit brews and would work out the % of the original volume so the gravity of the wort i was boiling was the same as if i was doing a full volume boil.

Ie. 3L boil. Use 3/23 to get amount of the extarct you need to use (if your volume is 23L).

Or, you could mix up all the extract in 23L litres in the fermenter and then pour out whatever volume you can boil and add it back after.

Am going to give this 1 a whirl proberlly this weekend when the brew fridge is empty. I ditch the 60mins hop addition but i still do a 60min boil yeah? So 30mins in the boild do my 1st hop addition then so forth?

30 mins?

It reads 20 mins to me but then i may need to out my glasses on.

I always do a 90 min boil regardless on when the first hop addition is.
