G'day men,
Is there any way to dictate the alcohol content when doing an extract brew? Most recipes I see might call for between 3 and 4 kilos of liquid or dry malt. This means it will turn out at around 5%. To reduce this do I simply reduce the amount of malt?

There are a number of ways to do this.
Those of us who do AG brews mostly have bought programs such as BeerSmith or Promash, which predicts your alcohol % when designing your recipes.
Or you could try a free calculator such as this one. Do a search on Google etc, there are some free downloadable programs available.

Beersmith works just as well for extract brewers. Even kit brewers use this to build their recipes and get an idea what sort of alc/ibu they are looking at.
Download it and try it but i bet that like most people, you will be more than happy to pay for it.
