Honey Blonde

Thinking of putting a beer together and before i start i thought i would run it by you guys
1.5kg Muntons Blonde
1.5kg LLME
500-600g Yellow Box Honey (added after the boil)
100g Cracked Wheat
100g Crystal
20g Cascade (40min)
12g Cascade (10min)

A couple of questions what would be the best way to prepare the cracked wheat
and should i just steep the crystal and add both at the end of the boil..
and do you think that it would be to bitter....

Hi,

What IBU's does this come out at? I'd tend to add the 20g at 10mins and dry hop the rest. Honey wheats aren't generally that bitter (Beez Neez is <20 IIRC). I don't know if you'd get that much benefit from that amount of wheat in a steep. If it was me I'd up it to 500g and give it a 65deg mash for an hour with the crystal.

Thanks for the reply....i was going to use the cracked wheat to give the beer better head retention...
should i use more crystal....i just what it to give the beer a little more body...

If you want to use wheat for head retention I would recommend wheat malt extract. Even 500g of dry extract makes a big difference, you could use less. Be careful of liquid wheat malt extracts, they're not all wheat but have some barley as well.
