A Ginger Beer Recipe

what does everyone think of this for a recipe. i'm looking for a nice, easy to drink ginger beer in a somehat similar mould to the bunderberg one, yet alcoholic

Boil for 45mins-1hr the following
- 1k of light malt
- 1.5Kg of Dextrose

With 20mins left in boil add can

- 1 can of Beermakers Ginger Beer Kit

Simmer the following in a pan with 1 cup of water for 20mins

- 1.5 teaspoons of lightly ground Cinnamon
- 1/2 teaspoon of lightly ground nutmeg
- Around 7 lightly ground cloves
- 1/2 lemon thinly sliced
- 1/2 lime thinly sliced
- 110g of fresh ginger thinly sliced
- small handfull of brown sugar

At end of main boil pour citrus and spice ingredients into wort stir it in
cool to 26*C strain into fermenter pitch Lavan Champange yeast and ferment

Fill up to 20 L

Also, how alcoholic would this be?

don't know how alcoholic it'd be off the top of my head, the kit cans contribute about 0.5% if i recall if you choose to make the alcohol free version. would guess around 5 - 5.5%.

it'll be quite dry though - especially with a champagne yeast.

drop the kit, use real ginger and lactose...

nah, use the kit, but i'd up the amount of fresh ginger root, 110g isn't much.
you'll probably have to leave this one sit for a while longer than normal in the bottles too, as the artificial sweetener in the kit can be a tad harsh in the first month or so.

I'd drop the champagne, and go for a simple old ale yeast.

i guess your right,did a coopers kit a while back .drinkable know after 3/4 months
