Lethal, how long has your pils been in bottle before you'll try it ?

Mine was 28 days in the making, (primary and secondary) and now is 24 days in bottle and Im chafing at the bit to try one. My TCB Summer Wheat was 21 days when I tried it and it is fantastic.

I guess I was just surprised at how good my mates beer was with only white sugar, after all I'd read on here. Ive used a mixture of dex, and malts in my brewing. Hopefully when my brews mature in the bottle theyll taste heaps better and I may even convert my mate from his ways. .

My Mex Cervesa is loads and loads better after extended time in the fridge. Basically the longer its in the fridge before drinking the better it tastes. So much so, I now find its borderline drinkable if it hasnt been in the fridge for at least a week.

Just dont bother using the freezer part at all while brewing beer and let fridgemate handle the temp control. If the auto defrost is after 8hrs running, it wont cause any trouble at all.

As far as kit brews go....aren't there some that are around $30 that surely would be of a far higher quality than the old coles specials?

I am by no means an experienced brewer but the $30 Kits I have done ie: TCB Wetpac's they are loads better than the can brews Ive done.

After reading about the headmaster glasses and other peoples tips I decided to experiment.
I have a dremel with a long flex shaft and round engraving/cutter tip. Very carefully I made some scratches in the bottom of one of my glasses.

Im not usre what style it is really. Im guessing more a german style as its pretty far removed from Hoegaarden, more like a Redback.
I had my second bottle tonight, in my new self modified beer glass, it was fantastic.

Normal routine seems now to have it that Bottling Day is also Clean The Fermenter Day. The day after Clean The Fermenter Day is Kick Off a New Batch Day.

The only problem I can see with your rountine is that you are wasting a day here. Why not put a brew down after you clean the fermenter ?

My fridge has a large cooling plate on the back inside wall, that sits close to the back side of the fermenter and Ive not had problems with my fridge freezing anything yet, and Ive racked at 3C for a week.

I tried a bottle last night.
2 days short of 1 month in bottle and it was very nice.
A high level of carbonation and a great light straw colour, slightly cloudy when ice cold but cleared as the beer warmed up a bit.

This is the TCB wheat beer you mention ?
Im curious because Im sure I read somewhere that wheat beers were at their best drinking younger than most home brews.

My batch is three weeks in bottle tomorrow, but I havent tried one yet. I'll wait at least one more week. :D

Sounds like your making a good choice with a toddler running around.

I too have an 18mth old who's 3rd word after mumma and dadda was "beer". He goes off if I dont take him out in the garage with me when theres beer involved.

I checked more of the bottles today. These showed no signs of any ring at all.
I have odd bottles from my bottling batches stored at home in mixed cartons, the full cartons go to my work for long term storage. It is possible the bottels at home have been exposed to higher temps than those at work ...
