Guys..
I have about 3 Large GLAD bags (1kg each) of NZ cascade flowers (8.2%aa) that i have sitting in the fridge. I wont use them all before they start going cheesy, so if anyone wants a bag they will be going for about 40 bucks each.. they have only been in the GLAD bags for a few days.

2g of sugar (sucrose) will add 1g per L of CO2 to your beer.
the rest is turned into alcohol by the yeast in the bottle/keg
therefore if you want 4g/L CO2 (or 2 volumes) then add 160g of sucrose for 20L of beer.
If you want 5g/L CO2 (or 2.5 volumes) add 200g of sucrose for 20L of beer

I have some grolsch bottles for sale if you want them.
50 green and about 35 browns.
They will need a clean and a new seal as they havent been used sinse 1991. Some still have beer in them.

just put a deposit down on a keg fridge... its a Skope SL295... Worth at least 2K, sold for $350 due to thermostat probs.. i did the measurements, she'll definately hold 6 kegs.. Got glass sliding doors (both sides) and fluorescent lights for ambience...

Haemocytmometers are about 120 bucks and microscopes capable of 400x mag are at least 800 bucks, but you are right... its the only true way of getting an accurate indication of yeast numbers and viability.

that schwarzbier recipe looks darn diddly good.. i might give it a smash after this pilsner in the 10C fridge has finished fermenting, might even use the same yeast (wyeast 2007), or i could grow up some oktoberfest blend... i was wondering what i would do with that 25kg bag of vienna i picked up...

Instead of steam sterilising, you could always chuck your clean bottles in the oven at 160C for 12 minutes... that will achieve the same thing as autoclaving with steam for 15 minutes at 121C... thats simple and you can do a few dozen at a time...

i think you'll find the basics of brewing chem in the Palmers "how to brew" book thats online...
I dont think there is any real need to know much more than that, except to get a water quality analysis done on the water in your local area, so you can compare it to other waters, and to see ...

I'll be starting at Gage Rds on the 12th....Assistant brewer... dunno how i'm gonna go without an autoclave to sterlise my starter wort, but i can see many more advantages than disadvantages.
