Re: Coopers English Bitter
I've found that It takes a while to mature, but once it does it's a good one. Mine's been in the bottle since mid-December and it's only now coming into it's own. Used the tin and 500g of light DME. IMHO I still think it could use a bit more hopping, but thats just me.

Thanks, that REALLY helps me a lot!
I have a buddy [oh, ok, a mate] in Brisbane who enjoys e-mailing me with your weather updates, especially after I send him photos of the mounds of snow around here!

Re: i like beer
Hi Rob! I'm a Coopers fan too. I have the Heritage Lager and the Original Lager in secondary right now, with the Real Ale to follow once it warms up a bit here in the States. Right now, we've got snow on the ground and more forecast for tonight. Great for lagering in my basement, but not good for ...

Re: Mexican Beer Recipe
Here's one that I made a couple of years ago, it came out great. I'm sure you could leave out the limes.
115g 10L Crystal
3.3lb tin [1.5k] Coopers Light Malt Syrup
1lb [@500g] Muntons XLT DME or similar
14g Hallertau or Mt. Hood - 60 minutes

Re: Summer Quencher: Mexi-Lime
I bottled this on May 8, opened one on Sunday May 18. A little early, but I just had to. Pretty good, well carbonated, but could actually use more lime.

Re: CARBONATION DROPS VS SUGAR????
I bulk prime when bottling 5-gallon [US] batches, and use carb drops when bottling smaller batches. I just find it easier. I've never noticed a big difference either way.

Re: Summer Quencher: Mexi-Lime
Just racked this to a secondary carboy over the past weekend.
The reason I used Mt. Hood hops is that the original called for Hallertau, and they are pretty scarce right now. Mt. Hood is described as a good substitute.
I agree, Corona is brewed pretty much to be inoffensive [ie, bland], and the ...

Re: Toohey's New in the US
You can tell the difference between Bud/Miller/Coors?
They all tasted the bloody same to me the last time I was in the US.
Well, actually I can. Millers uses corn as their primary adjunct to barley and I find it generally sweeter. Bud uses rice, which to me leaves a cleaner, drier taste that I ...

Re: Toohey's New in the US
OK, so I get the picture that Toohey's New is to Australia what Miller, Coors and Budweiser are to the US. I suspected that, but wanted to get honest opinions.
I found it rather unremarkable myself - not bad enough to pitch down the drain, not notable enough to buy again. THAT SAID.........it does ...

Re: Bottle - sugar or light dry malt
Kevnlis is on target, this is widely debated. The best answer I ever read on the topic is "CO2 is CO2 - period". For the "purists" among us, the use of DME to prime retains the "all-malt" characteristic. I've used DME, dextrose, table sugar, molassas, and honey in bottling, and dextrose and force ...

Summer Quencher: Mexi-Lime
If I figure it right, since we are coming to the end of our winter, you guys are coming to the end of your summer ( ? ), but here is a summer-time light lager for those who enjoy Corona with a slice of lime on a hot day. It's a recipe that I came across several years ago, but I only made it for the ...

I made this one up today:
1 Cooper's Mexican Cerveza
1 Cooper's BE2
12g of Mt. Hood hops [5.2AA] boiled for 5 minutes in the brewing water, then added the two ingredients above
2 packets of Cooper's pilsner/lager yeast swapped out from previous brews that I used liquid yeast in.
Made this kit as ...

Hmmm..........never heard of that one, but it does sound logical. Why throw it in the boil?Chris wrote:Throw the old yeast into the boil (assuming you do one). It is great yeast nutrient.

Re: Barkshack Gingermead
I brewed BGM about 3 years ago, and as much as I enjoy Charlie Papazian, I won't be making BGM again. At least with the recipe in the book. The dextrose gave mine that cidery taste - maybe I didn't use a strong enough honey, I don't know. However, I might use it as a base to start from, maybe using ...

Re: Cooper's Irish Cream Stout
Thanks for the welcome!
You're right, it could use some more hop bitterness in there. I should admit that some of the recipe was at least partially driven by what I had on-hand when I put it together. I was aiming for a sweet/milk/cream stout, which explains the lactose of course. I suppose I ...

Really wish I could make it, if for no other reason than to sample your on-tap offerings, they sound great.....but I have this little distance problem.
That is a great offer to your homebrewing buddies. I hope you have good attendance. Hope to hear how it turned out!

Please don't let me give you the wrong impression on the availability of HB supplies here. I can order just about anything [except those Morgans kits  ] on the Internet.
