i'm assuming you're talking about using 100g of chocolate malt grain right? or are you intending to use one of the 1kg morgan's chocolate malt cans? if you've just started brewing then steeping grains is probably a little ahead of where you should be. how about getting a good 1.7kg ...

...just use a bit of commonsense when you do it. i don't want to see anyone blaming me for telling them to brew generic kits when all they've done is add a kilo of white sugar to it and used the kit yeast.

ok, i've just tasted my sparkling ale and it is bloody awesome.
it isn't exactly the same as cooper's sparkling ale, but it's similar - it's just stronger in every regard. the malt flavour is stronger, the head retains better, the alcohol is higher (6.9%) and i've got 23L of it :)

corn sugar is dextrose monohydrate, unlike corn syrup which is maltodextrin. invert sugar is cool.

i have an american pale ale fresh wort fermenting with a white labs wlp001 californian ale yeast right now in the big fermenter. i'll let you know what i think in a month or two ok ;)
