Let me get this straight. Are you:
1. Allowing the beer to ferment out in primary
2. Racking to secondary, adding a cup of dextrose (boiled in water?)
3. Bottling, and priming with 2 coopers carb drops per longneck?
If so, this is all fine. I personally would leave out the dextrose from step two though as I don't see why it's necessary.

From what I've read and been told so far - there's Racking, and there's Bulk Primeing. and they are different and achieve different things I think?
Racking is after fermentation has finished, and means you have less sediment in the bottle.
Bulk priming is just the mixing of sugar/dex in bulk so you don't have to use the drops/scoop. I'm not sure if this means that the beer is again clearer? Or is is just simpler than adding drops?
I was told - that you'de primary ferment, then rack for another week, then rack into another barrel and bulk prime at the same time and bottle straight away. Personally this seems like a lot of work, and the carb drops are pretty simple - so I'm opting to just primary ferment then rack for a week, then use the drops to bottle. Could someone tell me if this defeats the purpose of racking, or if the carb drops leave little/no sediment??

Basically you just have to do what works for you and at the end of the day you have to work with the conditions you are handed..
In a perfect world everyone would have ideal conditions and brew a perfect beer every time but its not a perfect world now is it..
My suggestion would be to get yourself a cheap ( working ) fridge and a fridgemate and this could ease your worries a little but failing that, just do what you have to and at the end of the day it will still be a good drop
