Infection? (with pics)

Post by Jarryd »

Hi guys i know this has been asked a million time but if it helps I've provided a pic.
Brewed:
Draught
Coopers brew enhancer 1
300g Golden syrup

Everything went fine, had already finished fermenting and was ready to bottle. I then had to go away for work suddenly so it was left for 4 weeks (including fermenting week). Now keeping in mind when i left it was perfectly clear, when i came home there was a layer of white bubbles on top. I then moved it and the bubbles turned like an off milk/cream would . It smells fine and taste fine.

Feel free to call me a bitch if i'm over reacting haha.

me thinks infection, bottle it as suggested & drink it quick (if it still tastes OK carbonated)- though with that recipie (the coopers Kilkenny that really isn't) the golden syrup is overpowering for a while so it might go to crap before it matures so meh.

Clean your gear well before the next brew

Was it a white skin before you moved it? If it was, then it looks like an acetobacter infection, which eventually digests the dextrins in your beer making it watery and bitter. Not poisonous though.

The proof is in the drinking, but yeah it definitely has something growing in it. :?

I've got an AG batch in bottles right now that had the white skin. I've put a bottle in the fridge and will let you know how it tastes. I bottled this one half in my 12L keg, half in bottles... I eventually emptied the keg down the drain; not sure if it's just the thought of it being infected or the infection itself, but I just wasn't enjoying it.

Actually, now I come to think of it, the beer in my other keg also had the white skin and it's fine (these beers come from an inauspicious period where I was trying to keep the temp down by immersing fermenters in a pot of iced water; all I got was infections). If I'm not mistaken, if the infection hasn't gone too far, and you manage to rack the beer without getting any of the white skin into your next vessel, you can sometimes save your batch.

No such luck for my AG batch tho; you can see the white skin inside the bottles.
