I haven't been on for a while, so I didn't see your post sooner, but I would recommend reducing the honey further, say, 250g at most.

Cheers Dr. Tom! I'll reduce the honey as you suggest. What do you think of my plans for the hops? Does it need any more bitterness to balance the body? Belgian beers are traditionally pretty low bitterness, aren't they?

They are generally low in bitterness, and I think in general, the Belgians are generally low in hop flavour and aroma, preferring to allow the character of the yeasts to shine through.

I'd say, have a go, and better, have several goes and experiment. :-)

G'day drtom and Gentlemen,

I know this one is old, but while I sit here "sipping" this brew, I had to comment as Tripel lovers would love to know.

I did a Tripel by Brewferm and at the start it tasted a bit sus. I used the standard yeast as I wanted to test the kit, plus the candy sugar mentioned on the can. I did not do any FG SG readings..... :cry:

I have left them for a couple of months and I have had a few sitting in my fridge to see if this would alter taste.

After 1 month in the fridge, yes they lasted that long :lol: , the taste improved by over 200%.

I would recommend the kit.

Mind you, I know they are strong as after 6 stubbies, I struggled to talk :lol: :lol: . They hit you like a sledgie.

Maybe cut the Candi Sugar & Honey in half.

Thanks chris., thought it may have been the fridge that did it, but it appears time is the common denominator.

I will do this one again....now that they have turned out OK. Might even add a bit more yeast this time to see if it cooks better, as some posts have mentioned previously.ie High SG :wink:

Has anyone managed to get a yeast starter from a bottle of Triple Karmeliet?

Would like to use the yeast for the brewferm triple....
