G'day All,
Just a quick question about racking. I've never done it before, so I wan't to make sure I'm on the right track.
What I have done so far is, transfer the brew (Wander Draught, Coopers BE2 & Safale S-04) to my second fermenter, after being in primary for 6 days.
When I transfered, SG had settled to about 1017 (from OG 1042). It has now been sitting at the same SG since being transfered. The LHBS guy said to leave it in the 2nd fermenter for 7 days.
Given that fermentation appears to have stopped, I'm a little worried that my FG of 1017 is a little high. The temps for the bulk of the 1st 7 days were in the region of 15 - 18 deg C. Temps have now dropped to 14-15 deg.
Have I missed any steps ?. I notice that some people add some dex to produce a bit of extra Co2 in the 2nd fermenter.
Do I bulk prime directly into the 2nd fermenter before bottling or do I need to transfer it again back to the 1st fermenter. Can I just use carb caps instead ?.

Was it a lager or ale yeast?
When the temps are low I do not add any extra dex to the fermenter, especially if it is an ale yeast as the yeast tend to go to sleep when it hits 16 at my place
I'd recommend adding dex in summer in Newcastle.
Yes bulk prime into another vessel for bulk priming.
Try and keep the primary at 18+ for 7 days then when the FG is constant, rack then bottle after 5-7 days.
We really need to start a Novacastrian HB crew
