lager Problem

Post by lang »

G'day all again, due to a slight problem ( I married it :D ) my first Lager this year I managed to keep at around 12 Deg c for about four days then through events that are too complicated to explain, the temperature is now at around 19/20 Deg c, just wondering if it's worth keeping, I used a Cascade kit, LDME, Dex, Halletau hops and Safale S23,pretty simple, it kicked of (technical term ) ok, and appears ok, smell good, seems to be same as brew I put down same day (Ale) with S04.. both are now at same temp; so I guess at least one will be ok .
Lower the temp; back on the Lager , or see what happens?.. Lang.

I haven't used the cascade lager kit, but I'm betting you won't have a real problem here.

Relax - she'll be drinkable.

You've effectively given it a diacetyl rest...no harm at all in fact it is desirable to do this with most lagers...

You could either bottle it, assuming it's reached FG or you could rack it to secondary and lower the temperature down to 8C, and lager it for a length of time to be determined by how patient you are (4 weeks min, I normally do about 6-8 weeks).

Many thanks for that, I sort of thought it would be ok, with Lagers I'm on a learning curve and as time is needed for them sort of felt it best to ask the experts. The Diacetyl rest is very interesting, and the cure appears so simple, from what I read.
A quick question, if I bottle this when all appears ready to do so, will it "lager" in the bottle ?, I want to get a few lagers down this winter with the view of drinking next summer, time is no problem however I would like to get them 'right'. Am only using kits with good additives, ie: just the tin of brew and then quality malt, hops etc, ( a family member has a small brewery in Canberra who kindly sends me 'ingredients' all sorts of hops , yeast now grain (message there  ) however I don't like to trouble him too much ) as I want to learn by practice and reading ,albeit without too many failures..
So, thanks again, one day, I will set up in the proper manner, just can't yet.. Lang

Ok, the both brews suggest they are ready to bottle, should I leave the lager in the carboy for a while longer or bottle it now and store for a few months at low temperature?,it's sitting on 18degc.
I can store it at around 10 deg , or just sorta treat it as an Ale?. :) .
( Had a PM from 'Acklianer' but no message in inbox. :?: ).

I would keep it in the vessel for longer if you have the patience, 10C is ok. 4 weeks at 10C should result in a clearer beer.

Once bottled I would keep it at about 12C so it can bottle condition within a few weeks.
