Also on the beez neez beer, how do they keep the honey taste without it all just fermenting out? None of my beers with honey have had the taste of honey noticeable.

I did a ESB 15Lt wort kit, with half a kilo of orange blossom honey put in secondary, very noticeable honey aftertaste.
But this ...

Get out the wheat bags, microwave them and pack them around the base of the vat stat!
You're going to flatline her at those low temperatures.

Funny thing is I lager my beers at 9-12*C without a problem using Saflager yeast.
Yes it can take a bit to start at a lower temp., but it always starts.
I ...

Probably Boags Premium and Crown are joint most-overrated beers in Oz.

Normell, what other award-winning beers are on my worst list? I just don't think that Boags Premium or Crown taste any good. In fact, I think they taste bad!

Oliver

But all this putting down of good quality Australian beers ...

Got a feeling that Oliver's tongue may have been put in upside down.
Most of the world's award winning beer's, are on Oliver's worst list.

Would be ideal for keeping a constant temp., but hard not to disturb the yeast cake when you move them.
Maybe a pump setup to get water from the lake, thru a tub/bath then back to the lake.

The Cooper's Bavarian Lager (and Pilsner) are definitely real lager yeasts.

Well Oliver, why do they say on the tin, to brew between 18-25*C.
They are ale brewing temps. not lager temps

Cheers,

Best way to judge if its a REAL lager yeast is to look at the brewing instructions, if its temperature range is something like 18-27*C, it ...

Try a tin of Coopers Bavarian Lager, a bag of Ultrabrew (500g Light Dry Malt, 250gm Dextrose, 250gm Maltodextrin) with a 12g 'teabag' of Hallertauer hop steeped. Use the yeast as supplied.

This is a good one to brew over winter as the lager yeast laps up the cooler weather. Also the timing has ...

Does anyone have any comments as to why Coopers recommends fermenting between 21 and 27 degrees if 18 -22 degrees is the ideal temp range.

I personally use Saf** yeasts
http://www.fermentis.com
a lot of other brewers use liquid yeasts

With the Cascade yeasts, the are proper lager yeasts, but in a smaller size than normal, 7g compared to 11.5g, so to use them properly for lagering at lower than 19*C, you need 2 or 3 sachets per brew.
A ...
