Seriously though, I'd suggest starting with a White tin Coopers Stout and a bag of 'Stout combo' (available from any good HBS) and go from there tasting etc.

I had a Carbine Stout before Christmas, but cannot recall anything in particular about it beyond 'nice stout'

Recreating Carbine Stout?

While I'm not a noted stout drinker, we had our latest work Christmas party at the XXXX brewery, and I took the opportunity to sample both the Carbine stout and the XXX on tap there... and especially loved the Carbine.

Does anyone have any experience/theories on cloning it?

Barney, I'm not too sure how sweet your cider will be as there's no lactose. You need some unfermentable sugar.

As for my quince cider, I've tried a couple of stubbies and it's delicious, but still needs a month or so to carbonate. I wouldn't say that it was particularly sweet, I mean compared ...

Well, I bit the bullet and dropped on in this evening, the Brigalow, with 2 1/2 litres of applejuice for company, 300g of malt and 1/2 a kilo of raw sugar... started at 1044... we'll see how that goes for a first attempt.

Sounds a goer... I put this one down as my second-ever brew, played it straight with nothing more than a bag of BE2, and it certainly something .

Having said that, I cracked a couple last night for the first time in three or four months and drank them with w sliver of lime in my glass :roll ...

Which is quickest?

Holden and Vegemite... still about as Australian as one another... Ford Australia enjoys more autonomy than Holden IIRC...

Anyway, I like my Henries, owned more of them than anything else.

It certainly divides opinion! For mine, I enjoy it as a bit of a change from time to time, but make no pretensions about knowing a good beer from a bad one... glad Dogger enjoyed it, if only because of the amount of discussion over it. :D

Thanks guys! I'll keep all your advice at the forefront of my mind. Grabbed a bag of Brew Improver 1 last night, and am considering putting the lager tin aside for a pale ale (will purchase before the missus notices)... stay tuned in the new year for Barney's bash at brewing!
