I was putting down another two brews today (lagers) and my dear wife said "why do you need more beer, you have 285 bottles hidden away as it is". Hidden!.

This will probably disgust the purists, I have two types of Hallertau (Aroma and NZ),Nelson Sauvin ,B Saaz and Northern Brewer in pellet form (just like RatSak :lol: ) and throw in 'enough' as is, just before I tighten the lid and let her go..

Ok, the both brews suggest they are ready to bottle, should I leave the lager in the carboy for a while longer or bottle it now and store for a few months at low temperature?,it's sitting on 18degc.
I can store it at around 10 deg , or just sorta treat it as an Ale?. :) .

Many thanks for that, I sort of thought it would be ok, with Lagers I'm on a learning curve and as time is needed for them sort of felt it best to ask the experts.The Diacetyl rest is very interesting, and the cure appears so simple, from what I read.

G'day all again, due to a slight problem ( I married it :D ) my first Lager this year I managed to keep at around 12 Deg c for about four days then through events that are too complicated to explain, the temperature is now at around 19/20 Deg c, just wondering if it's worth keeping, I used a Cascade ...

Good point, and thanks for that ,little things that are so easy to over look. What is the safest way to take your SG readings ,to keep things as clean as possible ,and many thanks for the forum and the great advise on here..

As an aside, Iv'e noticed that some say when checking OSG and SG that they talk about unscrewing the lid, now, what I always do is take a sample out via the tap,into a jug, ensuring the air lock has sterile water in it. Any problem with this?. Seem to me to be OK,but I'm a willing learner.. Happy ...

Thanks fellars, understood. Certainly the small cost of the yeast is money well spent.Will try T58 at around the 18 /20 deg this time and a bit lower next brew and report back.. Cheers.

Thanks for that, I kept the temp.around the 18deg as I think, and please help me if I'm wrong,so as to have a 'slow' brewing, I found that the warm quick yeast reactions seem to denigrate from the taste of previous brews.

First time I've used it, seems a 'quiet' yeast ie; not as pugnacious as some, just took a sg and taste and it seems fine,had me thinking as I have a lager with Safale S23 and it seems to be a bit more active. All temps. and ingredients taken into account

Hi Timmy, the only brand I can buy,when available,is Brewcraft brewshield and the instructions are 30ml to 1ltr of water.So thats around 8ltrs. What brand do you use that makes 250ltrs from 250ml. That would be excellent,although sounds a bit strange.
